Fermoy Estate Cabernet Sauvignon Merlot

Dark crimson red with black tints. The nose shows an array of rich black-fruit aromas – blackcurrant, berries and plums with notes of black olive, dark chocolate and vanilla bean. The palate unfolds in layers of black fruits, savoury herbs, dark chocolate and oak spice.  A soft and juicy mid-palate is supported by a framework of powder fine tannins which add structure and length. 18 months maturation in a combination of 20% new and 80% seasoned French oak barriques from a selection of renowned Bordeaux cooperages. This finely structured wine is drinking well now but will continue to evolve over the next 6-8 years.
